According to the Spices Board of India, under the Ministry of Commerce and Industry, Government of India, Kashmiri Chillies are mainly grown in Jammu and Kashmir and Himachal Pradesh, but also in places such as Goa. Soaked red chillies are best to use in the gravies and dry dishes, for that you just need to remove the stems and seeds, place them in hot water, leave to rest for 30 minutes, drain and use as per the requirement. Occasionally, you will see people using raw green chillies as a garnish for Biryanis and other such rice preparations.

Rajma or kidney beans is a hugely popular dish to prepare in North Indian homes and paired with cooked rice. Kashmiri chilis are significantly less spicy than hotter peppers like jalapeños, which range from 2,500 to 8,000 Scoville units. You can also use them for Mirchi ka Salan, which is an accompaniment for the royal Hyderabadi Biryanis.
