Since then, every Rémy Martin cellar master has been tasked with the challenge of harvesting and aging brandies that would slowly age over multiple decades, ultimately ending up as a component within a future Louis XIII blend. This is no easy mission, no matter how brilliant a master blender might be at his or her trade. Uniquely for it, the Martell Cellar Master chose oak casks that had previously been used to make a light brandy with a low brandy effect, where these precious barrels, known as its roux because of the reddish tinge of their wood, have entered the ideal stage of maturation for both the oak and the Eaux-de-vie, allowing for an ideally balanced exchange between the two.
