Prosecco can be sparkling (“spumante”), semi-sparkling (“frizzante”), or still (“tranquillo”) wine and is made primarily with Prosecco (aka “Glera”) grapes. Many fizz enthusiasts will agree on this, however: the best Champagne for mimosas (or any Champagne cocktails for that matter) isn’t necessarily genuine Champagne—Instead, opt for more affordable dry sparkling wines such as Spanish Cava, Italian Prosecco or French Cremant.
